"Hey guys! My name is J. and I talking on behalf of Expert Village. In this clip I am going to show you how to chop your bacon for your German Potato Salad. Now there is a variety amount of bacon, different types of bacon. There's Hickory Smoked Bacon, thick sliced bacon. Me, I just got the regular old plain bacon, nice and thin, just like this. I cooked it and as you can see I drained it on this paper towel that way all of the grease gets off of the bacon. Basically what we are using our bacon for is taste, texture and color. So what we are going to do is save half of the bacon to put back into the pot while we are cooking the potatoes in the roux and we are going to save about half to garnish our plate with. Basically what you want to do is gather all your bacon in a big bunch just like this right, the half and slice right through them. You can give them a nice rough chop. Get your other half and doe the same thing. Slice right through them and give them a nice chop. The smaller you cut them the more pieces you will get. If you want to cut the fat off you can do that. But basically what you want to do is get two piles of your bacon, separate them just like this. One is for the roux and the potatoes and the other is going to for our garnish at the very end.
