"Hi this is Karen for Expert Village. Let's start by cleaning and prepping our vegetables I'm going to use a bowl of water here so you can see what I'm doing but you can use these you can wash your vegetables by the sink. Use a vegetable brush to brush that is specifically for washing vegetables and just make sure you scrub off any dirt and debris that might be on there from the garden, clean up all your vegetables nicely. Especially the celery rib you get you often get some dirt there, carrots we are going to scrub we are not going to peel them because there is a lot of nutrients in the skin. You just want to make sure that you get off any dirt and then we will just trim the top and the bottoms unless they look nice and green we don't really want them. Sometimes you can get some nice carrots with the green stems coming out and then you can leave the stems on there just clean them up and use them. Right now we would just be cutting off that little bit on the top and the tip and set that aside. Okay for the parsley stems I just took a bunch of parsley and chopped off the leaves I use the leaves for other things and just rinse them of and make sure you don't see any dirt in the water, make sure they are good and clean. This is our karobi I'm going to cut off after I scrub it I'm going to cut off anything that doesn't look good there and with a circular motion you can scrub it and get into all the little crevices Again we are going to leave the skin on this again in the stock we are going to discard the vegetables after we cooked them and we want all the nutrients from the skins. I will just trim off this extra stuff that is not so good. Okay next we are going to peel or onions and our garlic. "
