Now I'm going to show you how to skim the fat off of the top of the chill stock I've refrigerated this it's completely cooled and as you can see the fat layer on top has gotten hardened. So you can either take a spoon and just skim that off it's a lot easier to take off when it's cold this isn't hardened all the way and another trick is to take a paper towel and just lay it on the surface of the soup and then you can peel that right up and it takes the fat right off. And if there's still some more fat left in there you can do it again you just take another layer of fat off and just tuck that paper towel onto the surface of the soap. I don't know if you can see that there just on the surface let it sit for a second and you pull it up and it pulls the fat right off of the soup.
