"Hi, this is Josiah Owen with Expert Village. In a large pot we are going to heat up 3 tablespoons of oil so we can go ahead and saute our leeks. We're just going to throw those in there and stir them around so they can cook evenly. At this point you can go ahead and season them with salt and pepper if you like, just season and continue to stir. After you can tell that they are tender we can go ahead and add our garlic and then add our sweet potatoes. Make sure not to use all of your garlic when doing this, we're going to save about 2 cloves for later. Make sure to mix the garlic and the leeks, oil, and potatoes all together. "
