"Hi, this is Josiah Owen with Expert Village. Today we'll be making garlic and sweet potato soup. We will need 1/4 cup (tablespoon) vegetable oil, 3 medium leeks (trimmed), 1 large head garlic, 3 pounds sweet potatoes (peeled, cut to 1" cubes), 8-10 cups of chicken stock or water, salt, ground pepper, 1/2 cups of crumbled Feta cheese, and a 1/4 cup of fresh chives. We are going to start off by peeling our sweet potato making sure that we get all the skin off. After we peeled the potato we are going to go ahead and cut them into 1" chunks so just slice them about 3-4 slices down the whole potato. On the edge cut them into the chunks, now we're going to need to cut our garlic, so just press down with a flat part of your blade. The peeling should come right off and cut the ends off and then we're going to minced. If you have a garlic press that will work fine. With our leeks we are going to trim them into 1/4" pieces."
