That way nothing will burn or stick to the bottom of the pot it's good to use a pot with a heavy bottom and that will help also with not having any burning. Now for the onions we're just going to cut them in half or quarters you want to keep nice big chunks since we're making a stock and we're going to be straining it later you really don't need to cut them in small pieces everything can be in small onions can go in whole. The zucchini we're just going to trim the ends just take off the stem and the tail and you can throw in that zucchini in whole, where's my other zucchini trim that up. The kohlrabi I'm going to just I trimmed off all the extra stuff and anything that I don't like that looks of maybe a dirty spot that you couldn't clean up so well you can just trim that off. And then we'll cut that in half and put that in the pot, celery stocks can you clean them up the best you can you can put those in the pot whole, the parsley can also go in whole if you don't want to get a lot of leaf ends some people suggest that you just use the stems, you cut off the leaves use them for something else and cook only with the stems, you would need a bigger bunch to get more flavor but you can do that with the stems. And then the carrots again I'm just going to cut off the tips and the tails and you leave the skin on you don't peel the carrots cause it's a lot of good nutrients in the skin of the carrots, and the garlic goes in whole. "
