"This is Josiah Owen with Expert Village. Going to crack 2 eggs into a bowl making sure not to get a shell in there. If so you can just take that out. Add 1 cup of rich cream and just whisk those together. Just keep mixing until everything is nice and smooth. At this point we are going to go ahead and mix in the egg mixture with the potatoes on a low heat. Stir in a little bit in it first. If it looks too thick you can go ahead and add in a little bit more. Now this point we don't want to allow our soup to boil just let it cook long enough on low. Until our eggs are slightly cooked. "
