"Hi, this is Josiah Owen with Expert Village. Today we will be making potato stew. Start off with 1/4 pound salt pork cut into 1" strips, 5-6 bacon diced, 1 large onion, 1 1/2 tablespoons of flour, bay leaves, dry thyme, 1/4 cup dry white wine, 3 lbs potatoes cut into 1" chunks, 3 cups chicken broth, 1/4 teaspoon pepper. Now after peeling potatoes we are going to cut the potato in 1" chunks. We're going to cut the ends off and peel the outer layer of the onion, this is going to be to rough for us to eat, we can't use it. This is just a protected layer for the onion so I just want to peel that off cut the other end off, and if you just want to make a couple of slices throughout the onion. This is an easier way to make diced onions and I'm going to turn it half way and go the exact opposite. You're going to make a criss cross pattern, after you do this you want to turn it on its side and start dicing away make sure not to get your fingers. After dicing the onion we're going to cut the bacon into small pieces either 3 long pieces or 6 halves making sure the pieces aren't too big. "
