"Hello my name is Hiu on behalf of Expert Village. I'm going to show how to make hot and sour soup. For the blanching process, first we would have one part of water. Let it boil, then we would add a half a teaspoon of cooking wine to the boiling water. Then we can add the bamboo shoot into the water followed by the wood ear fungus. We blanch the bamboo shoot and the wood ear because both vegetables have some kind of a funny smell and taste. The blanching process would help get rid of these funny smells of the soup. "
