"Hello my name is Hiu on behalf of Expert Village. I'm going to show how to make hot and sour soup. To prepare the shiitake mushroom we would submerge them in water for 2 hours. Then we would squeeze off the water from the mushroom. We would trim off the wooden part of the mushroom. The wooden part, most shiitake mushroom are just too tough for chewing. If you feel uncomfortable to trim off the root with your knife, you can use a pair of scissors instead. Then we would trim the mushroom into finely striped and we would repeat the same process to the rest of the shiitake mushroom. We are using the same effort like we did with the wood ear fungus and that is what they look like. "
