"Hello my name is Hiu on behalf of Expert Village. I'm going to show how to make hot and sour soup. First we would submerge the wood ear in lukewarm water for around 30 minutes and it should double in size. Then you would discover each piece of wood ear fungus would have a very tough part. You have to cut the tough part off cause the tough part is not eatable. Then we would stack around 2 piece of fungus and julienne the fungus to finely strips. We would repeat the same process to the other wood ear finger. Remember fingers are always against the blade when you cut something really finely. "
