Fettuccine Alfredo is perhaps the most popular cream-based pasta dish in the United States. Rumor has it the dish was a big hit with American tourists who visited the restaurant of chef Alfredo di Lelio in Rome in the 1920s, including celebrity couple Douglas Fairbanks and Mary Pickford, who are often credited with bringing the recipe back to the States after their Italian honeymoon. Since the 1980s its simple but rich and decadent ingredients have made it a staple of Italian restaurant menus throughout the United States.
In these free video cooking lessons, expert chef Dominic Capone takes you step-by-step through the entire process of making Fettuccine Alfredo, including what cookware, utensils and ingredients you’ll need, and shares the time-honored tips and techniques of his family’s homemade recipe to ensure that your cream sauce turns out perfect every time.
"Hi there, this is Chef Dominic with Expert Village and today we are going to make alfredo sauce. Everybody makes alfredo sauce differently. I don’t think there is ever a time where I’ve actually tried it where it actually tasted the same. Alfredo sauce is fairly simple to make. A lot of people try not to make it or they think they can’t make it but it is actually probably the easiest of all sauces to make even more so than red sauce and mariner sauce. Depending on what part of Italy you are from, every alfredo sauce tastes differently. My family is from Napoli and I truly believe (not that it is wrong not that it is right) our alfredo sauce is probably the best and you will actually see once you try it yourself that it probably is the best. Don’t tell anyone I told you that. We will basically go over what you will need to make the alfredo sauce and how simple it is. We are going to feed a family of four so of course, if you are going to feed two, then you would just cut my recipe in half but if you are hungry like I am, I could probably eat all four of the recipes. Stay tuned to the next segment and we will go over what equipment, utensils and ingredients you need to make the perfect alfredo sauce. "

on 8/2/2008 OKAY, i gotta say- i made it, i tried it. AND... it tastes AMAZING... BUT.... Your stomach is gonna hurt ALL DAY, all from having half a bowl! the ENTIRE SAUCE, is made from heavy whipping cream- your body can't digest it properly, leaving you (or at least me and my mom) groaning and moping on the couch with stomach pain all day haha IF you make it, i recommend eating VERY LITTLE. ciao
