"Hi this is Dave for Expert Village and today we are going to be making chicken cacciatore. Okay now we have the sauce at a full boil this is a pretty high simmer here. You want to turn it down, down a little bit and you want to add your chicken pieces in. They have a nicely brown with all these seasonings on here. Nestle it all in there, may be even turn them over once get some of that flavor going. Then get another piece and then turn that over. See all those great veggies in there? This is a family style meal for sure that they love and they are going to come. Here is a thigh meat and this is all bone in so that is actually going to add more to the flavor to it also. Remember this is about half way cook through so it is going to cook in liquid, this is called braising at this point. The last piece in here just submerge that right in the beautiful sauce and you just want to have it in a nice simmer and then we are going to put a lid on top of it to keep the heat in and start the evaporation so you got a lot of nice sauce so you are going to show how to do the pasta in just a minute."
