Serving Haitian Gumbo

"Hi, this is David from the Big Easy Catering Company in Santa Barbara, California for expertvillage.com. Today we have made a very nice gumbo with a Caribbean flare to it. It has been simmering on the stove pretty much all day. I mean you could eat it sooner than that but with a little love and a little time it just gets better even on the second day it is better than that and probably the third day after that. So what you want to do is you want to scoop this into a big bowl. It has the rice in here. Look how beautiful that is. You see the perfectly cooked shrimp pink shrimp with all the vegetables and the sausage and the ham. Let's just do another. Okay, we are going to ladel up a big bowl of our Caribbean gumbo you see that is chop full of goodness there. I like a big bowl of this and it is great served with corn bread and then if you need a little more heat you can also use a variety of hot sauces. These are the ones that I like but there is a million of them out there."
