"Hi, this is David from the Big Easy Catering Company in Santa Barbara, California for expertvillage.com. We are making our Haitian Cajun gumbo today and we are getting to the point now where we are going to be doing our vegetables, sauteing those. So what you want to do is get a large stock pot because this is what all of your gumbo is going into. So we want to get it closer to the top. So you add just 2 or 3 tablespoons of oil, you can use, this is Canola but you can use olive oil too. I prefer the lighter taste of Canola. Swirl that around the bottom. Then you want to add you vegetables again this is your bell pepper, onion and celery. They are all about the same size. You pop that right into the pot and then you add I like a lot of garlic this is a dish that is really is very good with garlic. So I put a couple of tablespoons at least in there, so that's several cloves. Now you just stir it and saute until the onions are translucent and the celery and bell peppers are ready to get soft 5-6 minutes or so. "
