"Hi this is David from the Big Easy Catering Company in Santa Barbara, California for expertvillage.com. Today we are doing a Haitian gumbo and we have already read you off the list of ingredients but we are going to do the spice mix now. So what you want to do - you can definitely use your measuring spoons if you like. I usually like to do it by hand because that's how I'm used to doing it. But what we do we have our leaf sage - this is ground sage and I just measure the amount in my hands here and pour it into the bowl. Now this is ground allspice this is what really gives it a Caribbean flavor to it, so this is a really fun ingredient that would have your guest wondering what the heck that is that you put in there. Then we have black pepper - 2 teaspoons. We have ground thyme. Now you can use leaf thyme if you'd like but ground thyme just incorporates much better in this dish and dissolves better into the broth. Get that in, and I'm using kosher salt today. You can use any type of salt that you want, just your regular Morton's or anything. I like the flavor of kosher salt better. We add that to the mix, and then flour. This is going to be a thickener, so you want 2 tablespoons of that. And I started out with Cayenne pepper, so that is going to be our heat. As we said before, chilies would work well too. So what ever you'd like to do."
