"Hi, this is David from the Big Easy Catering Company in Santa Barbara, California for expertvillage.com. Today we are making Haitian gumbo: a little twist on the Creole gumbo that you see down in Louisiana. As I said before, there's so many types, but this is just really unique. So here's the ingredients we are going to be using today. We would start off with 2 tablespoons of olive or vegetable oil. I like Canola. 1 yellow onion, 4 green onions, 2 celery stocks, 1 green bell pepper, you can use chilies if you like - I'm going to use Cajun pepper today, so that is my preference. 3 garlic cloves, 2 teaspoons of ground allspice, 1 teaspoon of ground white pepper, 1 tablespoon of dry sage crushed, 2 tablespoons of all purpose flour, and 8 cups of chicken stock, and 1 ½ teaspoon of ground thyme."
