"Hi! This is Dave from expertvillage.com. We’re making jambalaya today. As you may have already seen, we have done the sausage and the ham. We have done the vegetables. Now, we are going to do the breast of chicken. Now, with the chicken you can use almost any cut that you like. I would like to use the breast it keeps up well, really tasty, and remember whenever you are using chicken, make sure you board is cleaned afterwards with soap and water for your next step. So what I would like to do is just slice the chicken breast into strips, and then you can cut it, across and again, into those bite size pieces that are pretty uniform in size, although there is no real rule to this, but that’s the way I would like to do it, that is the way my mama brought me up. And in this case we are going to make it for a 100 people, which would be more like having 10 of these chicken breasts, but in the interest of the time, and just so that you know what we are doing, we are just going to cut up these two. As you can see, we have beautifully cubed chicken, ready to put in the pot."
