Peeling & Dicing Eggs for American Style Potato Salad

"Hi! This is Dave for Expert Village and today we are making potato salad. Okay we've got our hard boiled eggs out, we put them in the cold water to make sure we can actually touch them and we want to peel them. Just go ahead and put them on your board like that and just start to peel away the shell. This is going to add some great flavor and texture to your potato salad. Mom used to make this all the time and this is one of the best parts of it. Go ahead and take that out, just like that. We will go ahead and do one more. They are still pretty hot still. You can do this a day ahead also. Go ahead and peel off of that off. You want to rinse those off. As you see we already have a couple done here. What we want to do is run a knife through them and do a little dice. It is going to be great for the potato salad. So I like to go end to end just like this. You can do sideways if you like, just like that. I like to gather those together there and do a nice little side dice, just like that."
