"Hi! This is Dave for Expert Village and today we are making potato salad. For potato salad we are going to use a yellow onion. You can use a Maui onion one of the sweet onion but I really like just a Spanish onion and very yellow. This is how we are going to do our onion. We are going to cut it length wise, just like that. You want to keep the root intact and cut off this end and just go like that. Same thing with this side. You are going to peel it. You've got the root attached so it is going to make it easier to cut. Same thing with the other half. This is going to be about a 1 cup onion. This is sort of medium so let's go ahead and peel that off like that. Okay going to discard this part. This is what I like to do. What we want to do instead of a fine dice to it, so just get nice little crunchy bits so you go length way with the onion like this. Then just go ahead and pull your knife in this direction and grab one more layer. As you can see it is almost like a blooming onion and just go across like this. You can make this kind of dice you like. I like for potato salad I like this to be really fine. "
