"Hi! This is Dave for Expert Village and today we making potato salad. Okay for potato salad we are going to do a little bit of celery and chop it up a little fine. It adds a little extra crunch to it. So we are going to take off a couple of ribs. We are going to take this on over to the sink and rinse this off. Now we have this rinsed off. This is how I like to do my celery. This is really tough at this one end. We want to take this off. Sounds like a lot and this is really stringy and not very tasty; put to that to the side. Same thing to the second stalk. Now you have these beautiful ribs. What I like to do is split them down to the end. I like to do this and do about thirds and put these together and just run your knife through these. I like to make these kind of small and when they go into your potato salad, you are going to have that beautiful flavor celery and that beautiful crunch. "
