"Hi! This is Dave for Expert Village and today we are making potato salad. Okay there are 2 types of potatoes you can use. We are going to use the real thin skinned red potatoes. I really like the color here with the red potatoes. They are really thin skin so you can keep the skins on those. You can also use Russet potatoes. Now this one you would probably have to peel. These are your usual baking potatoes where they have a lot of nice flavor to them as you know for baking. You have to actually scrub them if you are not going to peel them. There is also white rose potatoes, thin skin just like the red ones. Those are great for potato salad as well. You can almost use any potatoes for these but depending on the starch content, you can ask your grocery about those. "
