"My name is Brandon Sarkis and I am here today on behalf of Expert Village. Today I am going to show you how to make sweet and sour chicken and sweet and sour pork. Push off just a few pieces at a time with a spatula. Be sure to break the chicken up quickly because if it starts to stick together it will not cook as uniformly. The reason I have the high temp spatula is so I can use it in the oil, since it is plastic I do not have to worry about it scraping up the pan. This chicken will be fully cooked in about 45 seconds. While I wait for this to finish I will grab a plate to put it on. It is near being done, and since you are using brand new oil, the chicken will not be turning brown when it is done. You will just know it?s done, like I said about 45 seconds at this temperature should cook anything. Since it is nice and broken apart you can see it is cooking well. Take all pieces out of the oil onto a plate with a paper towel. If you have a finer skimmer that would be a good idea to use it, if you don't it is not the end of the world."
