"My name is Brandon Sarkis on behalf of Expert Village. Today I am going to show you how to make Sweet & Sour Chicken as well as Sweet & Sour Pork. Alright most importantly you are going to need a Woc. I recommend something big. This one is actually aluminum. Steel ones work probably a little better but I've got this aluminum and I prefer to use this. Steel is a little more forgiving as far as the heat goes. I also got another pot here to the side with some Canola Oil in it and I'm going to keep my oil in this. You are going to want to keep something because you are going to be using lots of oil and you don't want to have to try and find somewhere to put it. If you were cooking in a real restaurant, you would actually have a pot full of hot oil next to you. That's going to be that right there. Also in the background here, I've got another pot with some water going in it. I don't want to bring it up to a full boil. Just want to let that simmer because that is how we are going to cook our vegetables. Once again if I ran a real Woc line in an Asian restaurant, this would be a large stock pot that you get all of your water from and you would throw your vegetables in. Also have a heat resistant spatula. This one actually has holes in it which is very very handy for ladling out the fried stuff that we have to do in a little bit. We also have the handy knife. I have a good knife. I also got a high heat thermometer here. The reason why if you are not too familiar with your temperatures, this is a good way to get an idea of what temperature you are cooking at. We cook at about 350 today so need this. And over here, I have to make sure I have Canola Oil and sea salt. What we will be doing with this is we will actually be using this to season the Woc. It is something you have to do the first couple of times you use your Woc just to make sure nothing sticks to it. It makes it a better implement for long term use. Also obviously we are going to need is rice. One thing I can't recommend enough is nice high quality rice cooker. This works so much better than that boil in the bag nonsense or that stove top stuff. Spend, $30 it costs to get one of these and go with it. You will actually get real restaurant style white rice out of this. So it's definitely worth the money. "
