"Hello my name is Hui on behalf of Expert Village I'm going to show how to cook orange chicken and orange beef. So in this case you see we have already mixed the seasoning with the beef and they are moist. So to coat with cornstarch you stick one by one because you want them to get an even layer of cornstarch on the beef slice. If you sort of do it in the batch, some lumps will form on the meat surface, that may not be something that you want. And another thing you notice I try to keep my hands off the meat and use my right hand so that my left hand is still clean if I'm going to perform any other task in the kitchen. Only my right hand is with flour at this point."
