"Hi! I'm Anne Apra and I am a caterer in Los Angeles and I am here on behalf of Expert Village to teach you how to make an authentic Italian Rustic Italian dish. It is called Pasta Compuesto. My mother taught me how to make and now I am going to teach you. Now I am a caterer so earlier when I was making some other dishes, I went ahead and prepped all of my items. I have my course salt, I have black ground pepper, I have chopped garlic, I have flattened Italian parsley and some beautiful fresh basil. I am going to bring them over to the stove here where I have in a pot, hot boiling salted water to which I am going to add a little bit of extra Virgin Olive oil and let that come back to a really hard boil. While that is boiling, I am going to do a trick that mama taught me. In a mixing bowl, a metal bowl preferably, this now becomes my cooking implement. Rather than dirtying up another pot on the stove which is hard to do when you are a catering company or when you are catering at someone's house, you want to limit your messes. So I take a little bit of softened butter which I had sitting out for a while. I do about 2 sticks so that is about half a pound of butter and that sounds like a lot but I am making a lot of pasta because I am cooking for an army. Do that, while that starts to soften and melt down, I am going to start adding in some of my other ingredients. I have my beautiful parsley. I am going to add most of it. We are going to reserve a little bit of each of the herbs so that as a finishing garnish, I'll have it to make look really pretty. Because we are not cooking traditionally a sauce, we don't have to worry about putting the herbs in soon because if you add fresh herbs to a tomato sauce let's say you are cooking stove top for hours and hours like I like to make a sauce. The fresh green vibrant herbs will turn brown so it is best to use your herbs at the very end. Since we are not cooking, we are merely combining and heating all of these ingredients it is perfectly fine to add it now. To that I will add some of my beautiful course pepper and lots of nice salt. I love that salt and pretty much of all this garlic that I worked hard to chop. Very fun. Garlic is a very great antioxidant. It is great for your skin, great for your digestive system. It is overall a great great ingredient to add to any dish especially Italian. To all these ingredients I am going to add some extra virgin olive oil; about an equal amount to whatever was in there. So basically I am going to double the yield. I'm not sure if you can see that or not but you've got quite a bit of moisture there. You've got the butter, olive oil, salt and pepper and the herbs and the garlic. Now this is going to act as my lid on my pot so it is going to help to continue to boil. While that is heating up, I'm going to get that secret ingredient from my mamma's pasta compuesto. I'll be right back."
