"Our next step for making homemade Bruschetta is to take gorgeous vine ripened tomatoes. Now I like to use Romana tomatoes because well they are Italian. Well they are also very pulpy and delicious. They have a lot of flavor. Now I like to buy my tomatoes a little bit early before I throw a party. That way it gives them a chance to ripen. It is best to keep your tomatoes out in the fresh air rather than the refrigerator because that cuts down the ripening time. So time to keep them in the air. Don't buy them too soon, don't buy them too late. Perfect! Just like that. Okay our next step we are going to take a nice sharp knife and we are going to cut off the stem. Put that to the side. You can use this later if you want. We're not. I like to take and hold it on the flat side so that it doesn't roll around. Cut it in half and again, to make quarters. We are going to do a little technique called tomato petals. What I do is remove the pulp by just holding onto one end of the tomato and getting rid of all this yummy beautiful pulp. Now it is beautiful but it is not going to work on our Bruschetta so I am going to reserve it and add it to a sauce later or what not. Okay so I'll do it to all those beautiful tomatoes. It comes off really quickly. Isn't that beautiful. Very fast to if you make salads at home and what not. So if you want a really presentation, tomato petals are fantastic and very easy. All right if a few of the seeds hang on to it, I'm not so worried about that. It just gives a little more flavor and makes it look homemade which we love. Okay we are going to do that little trick again of stacking our beautiful tomato petals and we are going to cut them right in the center to make uniform cuts because when you make Bruschetta, you want it to just look gorgeous. So got all the tomatoes here. Just going to make nice beautiful full cuts, big and chunky, delicious and rip and you want them to look more or less the same. Then take the knife and I am going to make them just a little bit smaller because I don't want people to wear the tomato Bruschetta. I want them to enjoy it."
