"We are back and now the vegetables are done they hit there 2 minute mark, so we are going to go ahead and pull them off and cool them really quickly so that way you can always and make sure to turn off the heat otherwise you can have a fire. So you want to make sure and take your pot holder and you are going to go ahead and cool them down with cold water. You are just going to want to steam them around cause the key thing with doing your vegetables early and blanching them is that you can par cook them but also you want to cool them down quick so they don't keep cooking. Cause if you let them cool down naturally it will over cook and then you give them the quick snap. Alright they are ready and with storing vegetables after they cooked with the blanching you always want to use a air tight storage container this is the time that I agree the air tight storage container is the best way to go. With uncooked vegetables I disagree but once you cook your vegetables you always want to keep them in air tight container. So now we are on to the next step the vegetables are done, they are blanched, they are ready to be saute. "
