"Alright the next step to make my three citrus aoli is to combine the ingredients in my handy dandy food processor. I'm going to take a dollop, about two good scoops or so with a small spatula. And I'm going to do equal amounts plus a little bit extra, because I like that aoli flavor of the mayonnaise. About three or so scoops from a small little spatula. To that I'm going to add a good handful of the capers. We're going to start with a little at first and go a long way. Then we're going to splash, just about a third of the juice. And we're going to start the process now. As it blends, I'm adding in just a little bit more of the liquid to make sure it's a nice sauce. Now you can hear me better and I want to check the consistency. because when you dip whatever you're going to be dipping, in our case our chicken skewers, you want to make sure that the sauce is thick enough so that it holds it. So I'm just going to use my pinkie and basically dip it in there and see that it is a little too runny. If you find that your sauces are runny, add more of your product that is more solids. So I'm going to add to that a skosh more of the mayonnaise and just a skosh more of the sour cream and skosh is indeed a technical term. Here we go. Okay, good. Just enough to mix it in. I'm going to try that same pinkie in. Good. See how that just barely drips? That's more of the texture that I want. I'm going to pour this into my ready, waiting bowl. Over the sink so I don't end up making a big mess. And I'm going to serve it with my beautiful chicken skewers. A big thumb print. There we go. Chicken and Three Citrus Caper Aoli.
