"I'd like to share with you a wonderful catering secret from Catering Tips 101. When I'm making a big event and I'm doing a lot, a lot of food, I like to purchase time savers. And one great time saver is purchasing bags of frozen tenderloin chickens. They're beautiful, they're cooked, excuse me. They're not cooked, but they're raw but they're cut already and they're cleaned for you and they're in beautiful pieces such as this. Think ahead. Defrost it the night before, wake up first thing in the morning rinse the chicken off really good, but then keep it back in the same bag. Because you can also save time and a mess by marinating your chicken right in the same resealable bag. So to this bag of, it's actually two bags that I've put into one of these chicken tenderloins, I'm going to add that wonderful marinade that we made. It has fresh lemon juice, extra virgin olive oil, salt, pepper, and lots and lots of garlic and rosemary. And to that, I'm just going to pour all of that marinade right into there and I'm going to add just a little bit more salt and pepper because there's so much more chicken than you would think in just say one bag. Now I'm going to use my food handlers gloves. You notice I have these on. You can find these now pretty commonly in regular grocery stores, you can go to food specialty stores, you can even go to the hardware stores and use them. It's a great tool when using things like poultry or raw meat so you don't have cross contamination which is not our friend. That's when you're touching products that could actually, potentially get you very sick. As a caterer, I'm very sensitive to those kinds of needs. Also note that I used a different cutting board, a little silicon cutting board on top of my wood cutting board so I can actually use the cutting board below it again without having to stop everything and wash. Alright? There's my chicken all marinated. I'm going to take off my gloves and I'm going to zip it up. And now you have one stop shopping marinated chicken."
