"Hi this is Helena, the director of Chefs Inc. and today on behalf of Expert Village I am going to show you how to make a delicious cream of mushroom soup. So next we have other ingredients that we are going to be adding. We have the flour, which is actually going to be the thickener that we use for our soup. So I am going to put that over here because we will be using that next. Here we have a chicken stock, which you could also use vegetable stock for vegetarians out there. I have used both and I think they are both favorable. As far as the heavy cream, you do have options there. I know a lot of people are health conscious and weight conscious so you have options. You can use half and half, you can actually even use milk because the flour is going to thicken it and I just like the rich flavor of it but I don't always make it that rich. So, now that we have our mushrooms, our mushrooms are getting nice and golden and you can see the color difference in the creamy and the white mushrooms here. Now we are going to turn this off because this, these are done, but to this we are going to very quickly turn the heat down a little to a simmer and then to that. We are going to add our flour and the reason that I have this stock standing by is because once we put the flour in and stir that around we want to be sure to stir it well because we don't want any lumpy soup. We are going to stir that until all the flour is incorporated in there, we will use the last little bit."
