The great thing about soup is that you can use any variety of ingredients and they are often quite simple to make. Primarily a combination of meat, vegetables, or legumes, in stock or hot water, soup has been a favorite dish for centuries and comes from the word “sop”, meaning a piece of bread served with some type of liquid. There are two main classifications of soups: clear soups and thick soups. Whether you are making a clear bouillon based soup or a thick creamy soup, there’s no doubt that soup is an easy and great dish to accompany any meal.

"Hi, I'm Helena, the director of Chefs, Inc. and on behalf of Expert Village I'm going to be showing you how to prepare a delicious mushroom soup. Today we're going to use two types of mushrooms for the soup but you can actually use any kind of mushroom you like, I'm combining them together, it doesn't have to be just one. So, we have a white mushroom and these are the cremini mushrooms and also just so you know you can see the difference between these two mushrooms is that the cap underneath is open and there's space, this is not a fresh mushroom, so we won't be using it. So, as a buying tip, you always want the mushroom to be closed just like these. Now, I've already chopped up some mushrooms, we've sliced some, some we fine chopped and so I was going to show how to chop the mushroom. First, with the slice, we're going to slice it just like this so this will look nice in our soup and we'll add these to the slices. Same with the cremini mushroom, just like that, and when it gets to the end, when you're making the mushroom soup, what you can do is just chop up those ends, just chop that up and put that into our bowl of chopped mushrooms. Since I already have all of the ingredients pre-measured and prepared we're just going to start with the cooking of the mushroom soup."

on 8/2/2008 First let me confess that Helena is my sweetheart, so I have enjoyed her homemade mushroom soup many times. And let me tell you – it’s delicious! Mushroom soup has always been one of my favorites and this is as good as it gets! Besides being the BEST mushroom soup, I am amazed at how fast she puts it together. I remember one time that she went from raw, fresh mushrooms to a bowl of hot, steamy soup in about ten minutes. Amazing – and delicious!
