" Hello! This is Helen McMahon from Expert Village. Today we are going to use some of that leftover holiday lovely rib roast to make a beautiful soup. You probably have something like this sitting in your refrigerator wondering what you are going to do with these beautiful bones. I am going to show you a wonderful way to use them up and to make a delicious soup with the beef and the bones incorporated into the broth and vegetables to go along as well. The first thing we want to do is get rid of some of this excess fat; we do not need that. You might want to cut some of it down using a small paring knife so that you can just scrape it off into a container. By the way, the birds will love this and they need all the fat they can get in the summertime. So with your scrapings, you can put them into a container and put them out in the bird feeder or just scrape them into the corner of the branch as it meets the trunk of the tree. The birds can use that to keep warm and to fortify them over the winter. We do not need it because we are trying to cut down on our cholesterol but don’t throw it out because your wildlife will be grateful for it. Notice that I am using a plastic cutting board. Anytime you are using a cutting board for fish or for any kind of poultry or meat, it is not recommended that you use a wooden one because the wood will absorb some of the material that it is cut on and it becomes ingrained into the wood of the board, so use a plastic one for your fish, poultry or meat; that way you can wash it very thoroughly with hot soapy water and have it ready and it will be safe to use. Here is a rather large chunk of fat; we can cut that right out and the birds will be happy for that in this cold winter weather. "
