"Here is our zucchini. We only need about a cup of zucchini pieces so I'm just using two of these smaller ones and rinsing off any dirt that may be left. I am going to take the knife and I'm going to cut off both ends. And then I'm going to cut it in half lengthwise like so, pretty simple and then I am just going to make some slices, quarter inch slices like this. Zucchini cooks really fast so it doesn't need to be as small like a carrot and it is kind of nice to have a chunky vegetable in your soup. You will see, zucchini as you know, if you have had zucchini before it tends to get soft and the bigger pieces will just allow it to stay a little firmer with the same amount of cooking and here we go, cutting the other one into these eighth inch to quarter inch length pieces so that is pretty fast and I think it took me to do all those zucchini's you can't say it is a hard recipe doing this stuff, so keep clicking."
