"First step is to dice an onion and I don't know if you've ever seen how this is done but I'm going to show you and make it really simple. When you use your onion, we're using yellow onions today you can use white, purple it doesn't really matter. You want to cut off the root end and cut off the top and then we're going to cut it in half. Now here's where the no tears section comes in, is that you want to keep the cut side away from you, so when you're peeling this like so keep the cut side away and you'll see, you'll reduce the amount of tears and the time it takes for them to make you start crying because also part of the trick is to work fast when you're working with onions. O.k. we've got these peeled. Now to make a dice. It's so fun. We're going to cut with to within a quarter of an inch of the end. Can you see that? To the quarter of an inch of the end and by quarter inch slices or so and then we're going to cut into it the same length. Just two slices like so and then we're going to cut quarter inch eighth inch slices and look at that it makes a perfect dice and you couldn't do it any faster. Then the rest I just like to do a little chop like that, chop, chop, chop. So let's do this side here too again. We're going to cut into the onion to about a quarter of an inch of the root end. Just a couple slices in like so and boom. Alright ladies and gentleman we have a diced onion here. On to the next vegetable."
