"My name is Brandon Sarcas on behalf of Expert Village, today I'm making Creamy Broccoli Soup. Now we're going to go ahead and cut up my onion, take my quarter onion and peel the skin off the outside of it. Since I'm basically going to be sauteing this and pureeing it, I'm going to cut it into a pretty rough dice. I'm going to do some vertical cuts like this, flip it over and just cut straight down across those and I'll get a nice little dice there without having to expend too much effort. Use all the way to the tip and set aside. The next thing we're going to do is we're going to do some garlic. This is a whole head of garlic, I'm going to break off what I need, I need about eight cloves, here, three, four, five, come on, six maybe, six, seven, eight. Excellent, I've got them all here, now I could take forever trying to peel these individually, but I'm not going to do that. I'm going to take the flat edge of my knife here, put it on top of the garlic, take my palm making sure that I don't cut myself, and take my other hand and just push down as hard as I can, and crush the garlic and you'll see that the peel just comes right off of it then. It almost kind of peels its self. And you also have the advantage of having already crushed garlic so you're that much closer to having chopped garlic. The skinny pieces don't peel quite so easy so you might have to recrush those. Let me just crush the rest of these here, and finish peeling them. Oops dropped that one. This one is being difficult. Typically it will just fall right out of the peel like that one. When we go to cut this we're going to make sure that we leave it... We're not going to puree it or mince it down to where it's really small but we're going to chop it up until it's a pretty good size."
