"My name is Brandon Sarkis on behalf of Expert Village and today we are making creamy tomato basil soup. What we are going to do now is heating up. I have got this thing on high heat, my sauce pan or my soup pan rather. What I am going to do is I am just going to put a very small amount of olive oil in there, a couple of teaspoons, just enough to get a little saut? going on for our onions, and our shallots and our garlic. As soon as this gets hot we are going to get our onions, shallots and garlic and we are going to let them sweat for about ten minutes. Let's come back in a minute when this is hot. Alright we have got some hot in our pan so first things first. Our onions, you know you have got it hot when you hear them sizzle in the pan; throw our shallots in and our garlic. Actually I am going to get the spatula after the garlic because it likes to stick to the pan. A little bit of salt and pepper never hurt anybody. If you think that seems like a lot of salt realize that this is enough soup for probably about six people and I'll probably be adding more later. That's the salt and the pepper. Now just give it a stir. Everything is nicely coated with the oil, get the salt and pepper moved around a little bit, scrape everything down to the side of the pan. Throw a lid on it, turn my heat down from high down to about seven, set my timer for ten minutes and come back in ten minutes and show you how far we have come along so see you in ten minutes."
