"My name is Brandon Sarkis on behalf of Expert Village and I am making tomato soup. All right I'll take my potato and put it in a nice little dish. The thing with the potato is that it is going to turn brown as it sits out. Some people would say keep it in water. It doesn't matter for me because it is not going to affect the color of the soup. If you were making mashed potatoes or making potato soup, you would want to keep these uncut till the last moment but since I am making tomato soup, it doesn't matter if these are slightly brown or not. The problem is if you put in water, it soaks all the starch out which is the part we want for soup. So we are going to keep the potatoes all in one thing like this and keep it all nice. The next thing up is the carrot. All right we now going to peel the carrot. Keep it pretty simple. Get your peeler and start at one end and go all the way down. A lot of people don't know that you can use a peeler two ways and make sure you get all the skin off. Once again, this carrot skin we can keep this and this will make an excellent vegetable stock so I am going to push this off to the side because that is going to go in my stock pot for next time. Carrots are kind of tricky depending on the size and shape. I am just going to cut the end off of this one. I am going to cut this one in half. What happens a lot of times is you will see that this carrot is pretty much the same shape from top to bottom. Sometimes you will have a really big end and a really small end at the other and if that happens, sometimes it is better to cut the big end in half to make it three relatively equal size pieces. Since these are pretty much the same size, I am going to go ahead and split both of them. Be very careful in cutting carrots too because it is a good way to cut yourself. Same rules apply to cutting a carrot is the celery. We are going to do relatively large cut so nothing too big here. Carrots can actually be a little bit bigger than the celery because you don't want to cut it too small to where you are almost cutting your finger off or something. "
