"My name is Brandon Sarkis on behalf of Expert Village. Today I am going to show you how to make creamy tomato basil soup. Shallots are pretty easy to cut, just like you peel a small onion. You are going to cut the butt end off and they are easy to peel when you cut them in half. You just have to grab. The skin seems to be a lot more brittle. We are going to peel these and give these a good slice. We are not really going to mince these down that much. We are going to puree the whole thing. I think you get a better flavor out of it. I have got a little monkey's butt o this one so I am going to peel the whole layer off. I am leaving a larger piece to work with which makes it harder to even burn. We just want to sweat our shallots and our garlic together and that means we are going to need just a tiny bit of oil. Too much oil will make this thing super oily if you don't watch it. We are just going to put it in the pan with a little bit oil and let the natural moisture kind of come out of this and just sweat itself. All of this is one big thing and we don't want it brown up. If you put too much oil in everything will start frying and browning up. There is our shallot and now let's go on to our garlic."
