"My name is Brandon Sarkis on behalf of Expert Village. Today I'm going to show you how to make rustic Italian bread, tomato, and parmesan soup. It's going to be excellent. All right, so we're heating up our pan there. We're just going to add our olive oil into it, and tap it all out there. And the first thing we're going to do, is we're going to get our garlic, our onions, and our celery. And--we're going to wait until our oil is a little bit warmer, but we're going to sweat it. We're going to mix it in there and sweat it all together. So what I'll do is I'm going to go ahead and season my oil. Little bit of salt and pepper. What happens by doing this, is you basically infuse the oil with the salt and the pepper flavors, and it just helps permeate the--everything else a little bit better. All right, so I think that's pretty much warm enough--warm enough to start sweating the vegetables at least. So we'll just add our onion, and our celery, and our garlic right in the pot. Get in there. Make sure you get it all. Now what we're going to do, we're just going to stir it around, make sure everything is nicely coated in oil. Everything's nicely mixed up, and then we're going to throw a lid on it over medium, medium-high heat, which is something in the neighborhood of about a seven. Throw a lid on it, turn the heat down like I said, to about a seven, and we're going to come back in about five minutes. And if it browns up a little bit, it's not a big deal. It's--just the color is going to actually going to be good for the soup. That being said, I'll see you in five minutes."
