"Hi on behalf of Expert Village my name is Andrea Spano and I'm going to show you a couple of soups today from my new book Not Just Desserts. Once again we are going to be using chicken stock for the base and the liquid of the soup but of course it could be homemade like we did for the tortellini soup or you can purchase the chicken broth in the can and that is perfectly okay. Right now I'm going to show you how I prepare this potatoes these are I use about 3 pounds of potatoes. I'm not going to wash them yet, I'm going to peel them you can use a peeler I prefer a pairing knife. I'm just going to remove the skin all around, I feel that I have more control with a pairing knife because it is short and you push it against the potatoes and you guide it with your thumb. I try not to lose a lot of the potato so I try to cut just a little bit under the skin you are going to take of course a little bit of the potato with you but I'm not really taking that really much chunks. Okay. "
