"Hi, I'm Amanda with Expert Village. In this clip I'll be cooking the vegetables and making sure that they are nice and soft as we cook them. So I'm just going to stir and mix them together. You can stir them occasionally throughout this time. It should take about 15 for all of them to get nice and soft. We have been cooking the leeks now for about 8 minutes. As you can see it has cooked down quite a bit since we first put it in. You can also see that there is a little bit of moisture that has collected from the vegetables on the bottom of the soup. So you want to continue to stir it. Cook it probably for about 8 minutes more. Then all of the moisture should be just about evaporated. "
