on 8/2/2008 don't use a serrated knife to dice or mince garlic, i can see it bend when you try to "squish" the garlic. don't squish it, use a chef's knife or a heavier knife and "smash" it instead. "as well" everybody will find it easier to chop garlic with the knives i mentioned.

"Hi, I'm Amanda with Expert Village. In this clip we'll be mincing the garlic. I'll be using one clove of garlic for the soup. If when you're taking the skin off of the clove of the garlic, just place the knife on top of it and then pressing down. It squashes the garlic a little bit but it makes the skin easier to take off. Once you've done that, you can do that one more time. You can see it squashed a little bit but that releases the enzymes from the garlic which is where you get so much of the health benefits from. So I'm just going to thinly chop and mince the garlic."
