"Hi my name is Allen Diwan, and I'm the owner and chef of Kashmir restaurant in Budapest. We are here on behalf of Expert Village. The dish we are going to make is a spicy mashed potato with red leeks, which will be a side dish to our fish that we are cooking. What we are going to use for our spicy mashed potato is leeks. These leeks have been finely julienned already, and we are going to cut them slightly. We are going to cut them into very small pieces, and then we are going to fry our leeks. Get a nice hot pan and put in some vegetable oil. It might look like a lot of leeks but it really absorbs very well. We want this oniony flavor of the leeks to really come out in our spicy mashed potatoes."
