"ALLEN DIWAN: Hi, my name is Allen Diwan. I'm the owner and head chef of Kashmir Indian restaurant in Budapest. We are here on behalf of Expert Village. The dish now we're going to be preparing is called paneer masala. What you want to do is you want to get some of the aromas of the spices going on which will give us the nice flavor of the masala. We'll be using whole spices. We'll be using cinnamon stick. We'll be using coriander seeds. We will be using cumin seeds. We'll be using some cloves, whole cloves, black peppercorn, black pepper, some green cardamom and some black cardamom. So, what we want to do is from all these spices, we want to get the essential oils and the flavors of all these spices into our masala or into our dish. So, what we do is we heat the oil very hot. The oil should be very hot. We put in the spices and we let the spices change its color slightly to release its essential oils so the oil can absorb the essential oils from the spices. And then we're going to add our other ingredients. While it's doing that, the other ingredients, the onions, the ginger, the garlic, I'm going to cook together beautifully and absorb the flavors from the spices."
