"ALLEN DIWAN: Hi, my name is Allen Diwan. I'm the owner and head chef of Kashmir Indian Restaurant in Budapest. We are here on behalf of Expert Village. The dish now we're going to be preparing is called paneer masala. Now, to prepare our masala, we will start off by cutting our onions and we don't want the onions to be cut very, very, very finely. The reason being, we want to feel this rustic flavor of the masala in our dish, so just about that sort of size, cut into cubes. We use about--we need quite a lot of onions. Maybe about four onions or so. We use another half of that onion. Basically that's about enough, and we start off by sorting these onions."
