"ALLAN DIWAN: Hi, my name is Allan Diwan. I'm the chef and owner of Kashmir Restaurant, a Kashmir-Indian restaurant in Budapest. We are here on behalf of Expert Village. We're going to prepare a red snapper in a tandoori sauce. And now, what we're going to do is we are going to put our fish into the marinade and skin side first. Skin side first and make sure that all the marinade goes into all the incisions. So this one piece is done. And now, the second piece. And make sure all of it is in the incisions. That's it. Now, we're going to leave this fish to rest about two to three hours before we cook it."
