"ALLEN DIWAN: Hi, my name is Allen Diwan, and I'm the chef and owner of Kashmir Indian Restaurant in Budapest and we are here on behalf of Expert Village. And the next dish we're going to make is our pilau rice. We're going to make pilau rice with green peas. What we want to do is the water that we have put in the pot, we want it to come to a boil, and I think it has come to a boil. So, the water is boiling. Now, we need to add one ingredient to flavor our rice which is salt. We need a lot of salt into it, almost two tablespoons of salt. We will not be adding any powdered spices because the rice does not require any powdered spices and then we'll add our peas in. We'll wait for the water to come to a boil once again after adding the salt and the peas. And once it comes to a boil, we will add in the rice. After adding the rice, we will keep the heat up until most of the water from the rice has been evaporated. We want to have to make sure that this procedure--you take care of the rice at this moment because this is a very delicate procedure. Rice is a very delicate ingredient. If you overcook the rice, then you'll be spoiling the pilau and it will very sticky. If you undercook the rice, then you won't enjoy the flavor of the pilau again. So you have to be very sure that the timing is well balanced. Now, I'm going to wait. As I said I'm going to wait for it to come to a boil again, and it has come to a boil. We're going to add the rice. Make sure we take out all the rice. So, there you have it. We've added the rice to the water and once you've added the rice, we're going to cover the rice but the water should be about this much. If I can show you my finger about this much, the water level should be this much above the rice level. We're going to cover it again."
