"When you're cutting, always tuck your fingers in so that if you did accidentally cut yourself you'd scrape the knuckle rather than cutting the tip of your finger off. Always make sure you have a sharp knife because actually you could hurt yourself worse with a dull knife. That would actually be a worse cut, especially if you're using any force in it. Again, if you really don't want to do this, I have seen red bell pepper and green bell pepper come already cut for you. They might even come frozen, but I've actually seen them in the produce section pre-cut. We're using the red, again as I said, as much for color as we are for flavor. This is probably the most labor-intensive part of this whole recipe, cutting this one pepper, but it really doesn't take very long. The rice that we're using, I used organic long-grain brown rice, you can use any kind of rice you like. I think brown rice is not only healthier, but I think it tastes better. It has a nutty flavor. I made the rice in advanced because when you're making fried rice you want to start out with rice that has already been cooked and refrigerated. Sometimes when you order take-out they seem to give you a lot more rice than anything else and you end up with leftover rice. Well, this is a great recipe to make with leftover rice. It's a pineapple fried rice, so it's going to be very tasty. For presentational purposes, one thing I've seen done in restaurants, I actually haven't done it myself, but if you wanted to use fresh pineapple, you could actually cut it in half, hollow it out and serve it in the pineapple bowl. That would be really, really spectacular presentation. Again, by making it at home, you can control the amount of things like salt and fat that goes into the recipe. Using a non-stick wok or sauti pan you really don't need a lot of oil. If you want to use no oil, you actually could, you just would want to spray it and make sure that you use always non-stick utensils with your non-stick pan so that you don't get the nicks that you can get by using metal with non-stick. So there, I've cut my bell pepper. I've got everything ready, and now it's time to make the fried rice. I took a 20 oz. can of crushed pineapple in its own juice. I drained it really well, ended up with just the pineapple. I used the juice for another recipe, you could always drink it. There's no added sugar in that."
