"Chuck Byers: Hi, Chuck Byers here for Expert Village talking with Charles Jewett of Trilogy Wines, who is also quite the food connoisseur. He's going to talk to us about the Sommelier's match for food and wine, especially Beaujolais Crus. Hi, Charles, welcome to Expert Village. Charles Jewett: Thank you. Byers: So, Chuck, you were telling me about the fine food being served here. So, let's say you were a Sommelier. What would you serve with the Crus Burgundy that we were having, or rather, the Crus Beaujolais that we were having? Jewett: They also can be called, as you found out, Burgundy. Byers: As they can, indeed. Jewett: What we decided to do is to take a classic menu from Beaujolais. So, this is food that you very seldom see outside the region. So, we have sow's ear, crispy sow's ear, served with lentils. With that, to start off with, probably the wines we had today, Chuck. What we have for the next course is bone marrow; it's a classic dish with the parsley salad. There, I would say, that you could move up a bit and probably to the Morogo. And, finally, we have beef cheek, which is a classic dish in Beaujolais. And there obviously, the Moulin a Vent to finish that off. Byers: The Moulin a Vent being the sturdier of the group? Jewett: Yes. It's usually the biggest and the most intense in structure of all the Crus. Byers: What are the differences between Beaujolais and then the Villages Beaujolais? Yves-Dominique Ferraud: You are right when you said it is unfortunate that Crus Beaujolais from the different villages are not so well known. I think it's because the name of Beaujolais was pushing but not enough the name of the Crus. So, the difference is that, without being pretentious, Crus Beaujolais is high class Beaujolais. Beaujolais Villages is a very interesting wine for every day, for greeting wine with a friend. When you start to visit secluded Beaujolais you will have more sophisticated wine. So, there are ten differences. And you know in Beaujolais, we use only organic grapes, and there are really ten different wines due to the difference of the soil."
